Craving Satisfier: Sweet Potato Chips

One of my weaknesses is definitely potato chips.. the salty crunchiness is very satisfying to me. To make a healthy version I made some sweet potato chips. All you need to do is :

Heat the oven to 400 degrees
Spray a baking sheet with olive oil
Slice a sweet potato on a mandolin into thin sheets
Lightly spray the top of the sweet potato slices
Sprinkle with sea salt
Bake for about 10 minutes ( you have to play around with the time a bit depending on how thin the slices are)


So yummy!

Tasty Tuesday : Low Carb "Swaps"

Instead of going on a diet I am instead having fun in the kitchen making new and healthy recipes. I am trying to eat less carbs so I have been looking at Paleo recipes. Paleo, also called the "caveman" diet, focuses on the foods available when we were hunters and gatherers: Fruits and vegetables, meats, healthy fats, nuts , and seeds.

The fun low-carb "swaps" I tried:

Instead of pasta:

Spaghetti squash or green squash put through this gadget: the GEFU Spirelli Spiral Cutter

 
 

Instead of mashed potatoes:

Mashed cauliflower



For a great  low carb dinner try:

Lettuce wraps or Cabbage rolls . I used grass -fed  bison for my cabbage rolls . If you eat meat, you have to remember you are eating whatever the animal ate. Why would you want to eat chicken or beef that was fed grain and corn when you are avoiding these items?



 
 
It is super easy to make in the slow cooker. You just need cabbage, meat, sauce, and some spices. I choose not to include rice. Check out the recipe here.



A filling snack or light lunch instead of a sandwich:

Apple and peanut butter "sandwich"
